You scream, I scream, we all scream for (healthy) ice cream!


Last time when I strolled down the aisle I saw wonderful bananas, they were REALLY ripe, almost to ripe to actually get them sold, but luckily they found me and I found them and it turned out we made a really good team! I've created a wonderful banana ice cream/mousse, perfect for hot summer days or just in between when you want something healthy and homemade (which I am a fan of anyway)! Cause that's what it is, I have added no sugar to that one! Bear in mind that bananas do contain lots of fructose aka fruit sugar, which should't be consumed like there's no tomorrow. For a meal rich in simple and complex carbohydrates I recommend adding some whole-grains to it, for example oats or what I actually did, some "good" fat- which is nuts ( in my case finely chopped almonds)! 
Potassium, Vitamin A, Vitamin C are important sources for the well-functioning of your brain, your blood pressure, digestion, your vision and your overall health! Ha..who knew right? Oh and almonds keep your hair shiny and preserve your natural hair color, just in case you're worried about your (first) grey hair
It`s so easy and literally takes you just 2 minutes!

Homemade Vegan Banana Ice Cream/Mousse



Ingredients 
(2 persons)


  • 2 very ripe bananas
  • finely chopped almonds (or other nuts/fruit of your choice)
Option: If you want to have a slighter thinner and less creamier version of it, add some soy or almond milk. I chose to make that lighter version, so mine looks less like a real ice cream today but if you feel like real, solid ice cream go without that.


This is how you do it: 

First, peel the bananas and slice them into small (one inch) pieces. Pop them in your freezer, preferably for at least 3 hours, better overnight as they should be solid. Put everything in a blender/food processor and start blending the bad boys, be careful not to over blend it, otherwise it`ll lose its creamy consistency. Also watch out for any chunks and blend properly, unless you want to have a chunky ice-cream:-) Enjoy your homemade ice cream right then! Pimp your ice cream with berries, chocolate, cinnamon or even sea salt...you`re the chef!
