I have seriously not eaten anything more satisfying on a hot summer day than this refreshing watermelon-feta-aragula salad. The combination of sweet and salty, as well as the distinct taste of arugula and the crunchiness that comes from the cashews is just incredible! Watermelon is not only hydrating( it consists out of 95% water) , low in calories (46 cal./cup), contains potassium, iron, vitamin C , its even supposed to be good for your libido :-) So, what are you waiting for?

Ingredients (Serves 4)
- 1/2 large watermelon ( the sweeter, the better)
- 1 cup of (crumbled) feta cheese ( around 1 package)
- 1 package of arugula
- 1-2 tbsp. of olive oil
- 2 tsp. honey
- Juice of 1 lime
- pinch of salt and fresh pepper
Direction
Wash arugula and dry well. Remove the rind from the watermelon and cut the watermelon into small 1-inch cubes. You can now either use crumbled feta cheese or you dice it into 1/2-inch cubes and toss it with the arugula and the watermelon together. Roast some nuts in a pan( no need to use oil) but be careful not to burn them. You can now sprinkle some cashew nuts on top of your salad. You can also use walnuts or almonds. I prefer cashews, because they are great for your skin as they are rich in zinc. Whisk together honey, lime juice, salt and pepper and slowly pour in the olive oil to make your vinaigrette. Drizzle your salad with this delicious dressing and toss it well.
Try to serve immediately, as the salt in the vinaigrette will make the watermelon lose its water very fast. Try to avoid this by eating it fast, but believe me , you sure will have no problem with this one:-)
